1 Tbsp. olive oil
1 lb. chicken breast, cubed
1/4 c. onion, chopped

1 c. chicken broth
1 (4 1/2 oz.) can chopped green chillies
1 tsp. garlic powder
1 tsp. cumin
1/2 tsp. dried oregano
1/2 tsp. cilantro
1/8 tsp. ground red pepper

19 oz. can cannellini beans
shredded Monterey Jack cheese

Heat oil in a large saucepan over high heat; add chicken and cook 4 to 5 minutes, stirring often. Remove chicken with slotted spoon. Add onion to pan; sauté 2 minutes. Stir in broth, green chilies and spices; simmer 2 minutes. Add chicken and beans; simmer 5 additional minutes. Garnish with cheese before serving.
