4 new potatoes, quartered
2 tbsp. olive oil
4 carrots, 1" pieces
1/2 tsp. thyme, crushed
1 medium onion in wedges

Directions:
Directions:
Toss together all ingredients. Place mixture in a covered dish. Roast at 375 for 1-1/4 to 1-1/2 hours or until tender.
