1/3 c. red wine vinegar
1/3 c. salad oil
1 small onion, thinly sliced and separated into rings
1 tsp. salt
2 tsp. dried parsley
1 tsp. dry mustard
1 T. brown sugar
2 (6 oz.) cans mushroom crowns, drained or fresh mushrooms

Directions:

In a small saucepan, combine all ingredients. Bring to a boil. Cook 5 minutes for canned or longer for fresh. Chill overnight in a covered dish.
Best if marinated at least 1 - 2 days.
