6 large yams
2 eggs
1/2 stick butter
1/2 - 3/4 cup milk
1 tablespoon vanilla
1/2 tsp. salt
topping:
1/2 stick butter
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans

Directions:
Directions:
Cook the yams until soft, about an hour. With a hand mixer, mix together the yams, eggs, 1/2 stick butter, milk, vanilla and salt. Beat well. Cook in a 9x13 dish for 45 minutes or until bubbly around the edges. Meanwhile, mix the topping ingredients with a spoon, in a small bowl. After the casserole is bubbly, spread on topping and cook for an additional 10-15 minutes until golden brown.
Serves 6-8
