6 lbs. tenderloin or sirloin steaks
9 Tbls. flour
9 Tbls. butter
3 cans whole button mushrooms
2-3 boxes fresh mushrooms
5 Tbls. dried onions ( or 3 large onions chopped
3 cans Campbells beef bouillon
All liquid from canned mushrooms
1 1/2 tsp. paprika
3 tsp. dry mustard
1/2 c. or more sherry wine
3 cartons sour cream

Cut meat in narrow strips 3"by1/2". Trim off all of the fat and sinew. You also can have a butcher do this for you.
Brown meat quickly in butter. I like to keep the meat rare as it will cook more later. Brown and season mushrooms (I think I used 8 oz. cans) and onions if I used fresh.

To make gravy add all other ingredients except sherry and sour cream. Add the gravy to the meat mushrooms and onions. I use my roaster to make this. Add at least 1 tsp. of salt and then the sherry. Cover and bake or simmer on stove (oven 350) for 1 hour or more. ( I put mine in the oven). Add sour cream just before serving. Have sour cream at room temp.
