One head of butter lettuce or red lettuce
1 hard boiled egg
1/2 cup chopped purple onion
1 small jar or can of pickled beets, drained
Blue Cheese dressing

Directions:
Directions:
Prepare lettuce, add sliced egg, chopped onion, sliced beets. Toss at last minute with blue cheese dressing. Good counterpart to spicy food.
