1 1/2 ground beef (brown and drain)
Seasoning for beef: 1/2-1 cup chopped onion
1 Tbsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. cumin

12 corn tortillas
2 small cans enchilada sauce
16 oz. Monterey jack cheese (taco or other shredded cheese that you may prefer)
1 cup sour cream

Directions:

Spray 13x9" pan with non stick spray. Put 1/2 cup of enchilada sauce on bottom, layer with 6 tortillas. Add beef mixture with seasoning. Top with 1 cup of sour cream and sprinkle with 8 oz. shredded cheese. Layer remaining 6 tortillas, add sauce and top with 8 oz. shredded cheese. Bake covered for 375 for 40 minutes. Uncover and bake for another 5 minutes.
