5 C. finely diced fresh tomatoes
1 C. red onion, diced
1/2 C. vinegar
3 tsp. salt
1 tsp. garlic, finely chopped
1 C. green, red, or yellow peppers, diced
5 banana peppers, diced
4-6 diced jalapeņos - as desired for hotness
2-4 serrano peppers - as desired for hotness
15 stems fresh cilantro, leaves only, finely chopped

Mix together all ingredients. Best after setting in refrigerator 3-5 days. All ingredients can be blended in food processor, but mixture will be more like a sauce.

I prefer the chunky, chopped version, but the chopping takes a little longer to prepare. Wear plastic gloves when preparing hot peppers!
