1 gallon small firm green tomatoes, diced or sliced
1 C. salt
2 quarts onions, diced
1 qt. bell peppers, diced
1 C. hot peppers, cut in small pieces
3 C. sugar
2 tsp. black pepper
1 qt. white vinegar

Directions:
Directions:
Pour salt over tomatoes and let stand 3 hours. Drain. Do not wash. Pack tomatoes loosely into hot quart jars. Have vinegar, sugar, and black pepper boiling.

Add chopped vegetables and cook until color changes, not more than 15-20 minutes. Slowly pour vegetable and liquid over tomatoes, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath for 20 minutes.
