1 Large watermelon
1 qt. vinegar
5 lbs. sugar
1 oz, stick cinnamon
1 oz whole cloves
1/2 oz powdered lime in 1 gallon water

Directions:
Directions:
Prepare the rind by removing all red and green parts, using the pale pink/green or clear rind. Cut into desired shapes (1 inch or 1/2 inch squares). Soak overnight in water and lime in large container. Next day, drain rind but do not wash. Cover with water and cook 2 hours. Drain again and cook slowly for 1 hour in syrup made of vinegar, sugar, cinnamon, and cloves. Syrup should cover rinds. seal in hot, sterilized jars. Process in hot water bath for 20 minutes. This recipe makes crisp watermelon rind pickles!
