1 C. Cooking Oil
2 C. sugar
2 C. grated zucchini (not peeled)
2 tsp. vanilla
3 C. Flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 C. Coconut
1/2 C. nuts

Directions:

Mix all ingredients in order. Bake in 2 loaf pan at 325 degrees for 1 hour.
