sausage - 15 links
green peppers
2 large tomatoes
1 can crushed tomato

For 100 people:
105 sausages
14 green peppers
7 diced tomatoes
7 crushed tomatoes

Directions:
Directions:
Put sausage in large pot, cover with water over high heat. Skim often, bring to a very slow boil - cook 15 minutes. Drain off about 3/4 of the water.

Add 2 sliced green peppers and 2 large sliced tomatoes and 1 can crushed tomatoes. Cover, bring to a slow boil and cook 10 minutes. Gently stir to blend veggies and sausage. Cook 10 more minutes.

OR

(for oven use) follow the above directions down to "Add" step. Instead put sausage into roast pan and continue with additions. Cover with foil and bake at 350 1/2 hour.
Stir and continue to bake 30 minutes. This way is the best if you want to double the recipe and make 30 links at one time.
