3 lbs. drumsticks and thighs, skin removed

MARINADE:
1/2 c. buttermilk
1 T. Dijon mustard
2 garlic cloves, minced
1 tsp. hot sauce

COATING:
1/2 c. whole wheat flour
2 T. sesame seeds
1 1/2 tsp. paprika
1 tsp. dried thyme leaves
1 tsp. baking powder
1/8 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Place chicken pieces in a ziploc bag. Mix marinade ingredients and pour over chicken. Marinate in refrigerator for 1/2 to 8 hours. Turn occasionally. Meanwhile, measure all dry ingredients in shallow baking pan and set aside.

To Assemble: Preheat oven to 425. Line large baking sheet with foil and place wire rack on top. Spray with cooking oil. Remove chicken from marinade and lightly dredge with coating. Place on wire rack. Bake the chicken until golden brown (not pink in center)
for 40 - 50 minutes.
