1 T. cooking oil
1 1/2 lbs. boneless pork leg roast or shoulder roast
1 T. cooking oil
2 med. onions, quartered
4 garlic cloves, minced
1 t. ground ginger or fresh
1 t. paprika
1 cinnamon stick
2 c. prepared chicken broth
1/4 c. tomato paste
1/4 t. salt
4 Granny Smith apples cored, peeled and cut into 8 wedges each
2 T. lemon juice
2 T. honey

Heat 1 T. cooking oil in large Dutch oven on med-high heat. Cook pork, in batches, for 5 minutes, stirring occasionally until browned. Remove from pot. Heat another 1 T.of oil in the same pot on low heat. Add onion; cook for about 6 min. and then add garlic. Cook until softened. Add ginger, paprika, and cinnamon stick. Heat and stir until fragrant about 1 min. Add pork, broth, tomato paste & salt. Stir, cover and bake 325 degrees for 1 1/2 hrs. Add apple. Stir; bake uncovered for 40 minutes until apples are soft and sauce slightly thickened. Remove and discard cinnamon stick. Add lemon juice and honey. Serve with rice or potatoes.
