1 c. orange juice
1 c. chicken broth
1/2 c. honey
1 tbsp. lemon juice
1 tbsp. soy sauce
1 tbsp. vinegar
1 tsp. orange peel
1 tsp. ground ginger
1/2 tsp. salt
4 boneless skinless chicken breasts, cut into cubes
1-2 tbsp. canola oil
1 tbsp. cornstarch
2 tbsp. water
Hot cooked rice

Combine above ingredients except chicken, cornstarch, water, and rice. Pour over chicken and marinade for 8 hours or overnight. Drain chicken. Stir fry chicken in canola oil until done. Combine cornstarch and water. Stir in reserved marinade and bring to a boil. Cook and stir for 2 minutes or until thickened. Serve chicken and sauce over rice.
