4 c. fresh or frozen tart cherries
1 c. sugar
3 tbsp. tapioca
1 tsp. finely grated lemon peel (optional)
1 tbsp. butter
Crust for 2 crust pie
1 egg white

Directions:
Directions:
Preheat oven to 375. Combine cherries, sugar, tapioca, and lemon zest, if desired. Let stand for 20 minutes. Pour into unbaked pie crust and top with remaining crust. Cut slits in top of crust to keep from boiling over. Brush egg white over top of crust with a pastry brush. Bake for 50 to 55 minutes. Let cool before serving.
