2 Tbsp. olive oil
juice of half a lemon

4 cloves of garlic, peeled and minced
1 tsp. ground pepper
1/2 tsp. salt
1 tsp. oregano

1 lb. fairly tender beef (strip, rib-eye) cut into 1 to 1 1/2 inch cubes

Directions:

Soak wooden skewers in water for 30 minutes at least (or use metal skewers).

Combine all ingredients in bowl or zipper plastic bag. Turn to coat everything with seasoning mixture. Marinate 30-60 minutes, turning occasionally.

Start grill or broiler on high (oven rack 4 inches below heat). Skewer meat and grill or broil, to medium-rare, about 10 minutes. 4 servings.
