"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Oven Fried Bacon, by Craig Carroll, is from The Carroll Family Cookbook,

Bacon Shallow roasting pan or cookie sheets with sides.
I prepare bacon in this fashion if I want to cook a large amount at one time.
Pre-heat oven to 450º. Arrange bacon strips in a shallow roasting pan of cookie sheet with sides (to prevent the grease from running off into the oven). Place in oven for 20 minutes. Check and adjust time to according to how done you like your bacon. 20 minutes is soft, 30 minutes is hard.
