4 cups frozen corn 2 cans black beans rinsed 3 medium tomatoes seeded and chopped 1/4 cup minced cilantro 1/2 cup minced red onions DRESSING: 1/4 cup lime juice 1/3 cup red wine vinegar 1 tablespoon Dijon mustard 2 teaspoons ground Cumin 3 tablespoons oil. Blend all dressing ingredients together.
Cook and drain the corn. Mix with other ingredients. Add the dressing and mix. Chill to marinate.
