2 Tbsp. butter
1 Tbsp. flour
2 hard boiled eggs,sieved
1 tsp. grated peel of one lemon
1 tsp. Worcestershire sauce
1 quart of milk
1/2 cup heavy cream
1 tsp. onion juice
pinch of mace, salt, and pepper
2 cups cooked crab meat-- 2 cans
3/4 cup mushrooms
1/4 cup celery
1 tbsp. butter
1/4 cup sherry, optional

Directions:
Directions:
1- Blend melted butter, flour, sieved eggs, lemon peel and Worcestershire sauce to a paste and put into a heavy pan.
2- Combine 1 quart of milk and 1/2 cup of heavy cream. Blend in onion juice and mace slowly to paste in sauce pan and bring to boiling point. Stirring constantly. Cook 2 minutes. Add salt and pepper plus the crab meat.
3- Saute the celery and mushrooms in butter and add this mixture to bisque.
4- Before serving, add the sherry, if desired. This adds flavor to the bisque.
