4-5 lb. pork tenderloin
2 Tbsp. flour
1 tsp. salt
1 tsp. pepper 1 bay leaf, finely crushed
1/2 tsp. thyme
1 onion
2 carrots
1 stalk celery
1/2 cup brown sugar

Directions:
Directions:
Mix dry ingredients together and rub on pork loin, place fat side up in 9x13 baking dish
Chop onions, carrots and celery and sprinkle on top of loin. Pour 2 cups of water over all. Bake uncovered at 325 for 1 1/2 hours, basting every 30 minutes. Sprinkle 1/2 cup packed brown sugar over and bake for another 30 minutes.
