1 c flour, 3/4 c sugar,1 1/2 tsp baking powder, 1/2 tsp salt, 1/4 c cooking oil, 3 egg yolks, 1/3 c cold water,1/2 tsp vanilla, 2 tsp grated lemon rind, 2 tsp lemon juice, 1/2 c egg whites, 1/4 tsp cream of tartar.

Sift flour, sugar, baking powder and salt into a lg. mixing bowl. Make a well in the center and add cooking oil, egg yolks, water, vanilla, lemon rind and juice all at once. Beat with a wooden spoon until smooth. Measure egg whites into a lg. bowl; add cream of tartar and whip untill stiff but not dry. Fold in egg yolk mixture gradually and gently until just blended. Pour into an ungreased 9" tube pan and bake at 325 Degrees for 50 - 55 minutes. Top should spring back when touched with finger
