1 cup chopped onion 1 1/2 cup chopped carrots 1/2 cup chopped celery red sweet pepper chopped (optional) 1 whole zucchini chopped 1 can tomatoes (or use fresh) 1/2 tsp oregano salt and pepper to taste Chili powder or cayenne pepper 1 can lima, kidney or white beans
Saute all ingredients except beans and let simmer for 1/2 hour. Then add can of beans and heat thoroughly before serving.
