2 gallons cucumbers, cut into chunks about 3 in. long
2 c. salt
water
1 tbsp. alum
5 pints vinegar
6 c. sugar
1 stick cinnamon
1/2 oz. celery seed
pickling spice to taste
3 c. sugar

Directions:
Directions:
Place cucumbers in a crock with salt and 1 gallon boiling water. Let stand for 1 week;skim top if necessary. On the 8th day, drain cucumbers and pour another 1 gallon boiling water over top. Let stand 24 hours. On the 9th day, drain cucumbers and add 1 gallon boiling water and 1 tbsp. alum. Let stand 24 hours. On the 10th day, drain cucumbers again and add 1 gallon boiling water. Let stand 24 hours. On the 11th day drain cucumbers well and put in a large clean jar. Pour boiling syrup over them. To make syrup, combine 5 pints vinegar, 6 c. sugar, cinnamon stick, celery seed, and pickling spice. Bring to a boil. For each of the remaining 3 days, add 1 c. sugar. On the 15th day, pack in canning jars and pour boiling syrup over top. Top with seals and rings.
