3 C. flour,
1 tsp. salt,
1 tsp. soda,
3 tsp. cinnamon,
1/4 tsp. baking powder,
3 beaten eggs,
2 C. sugar,
3 tsp. vanilla,
1 C. oil,
3 C. grated zucchini (not peeled),
1C. nuts, chopped (optional)

Directions:
Directions:
Sift together the flour, salt, soda, baking powder & cinnamon. Beat eggs. Add sugar, vanilla, & oil and mix well. Stir in grated zucchini and the dry ingredients. Blend well. Stir in nuts.
Bake at 350 for 1 hour.
This will make 2 loaf pans.
