1 c. flour
1 1/3 c. packed brown sugar
1/3 c. butter
2 eggs
1 tsp. vanilla
1/2 tsp. baking powder
1/4 tsp. salt
1 c. flaked coconut
1/2 c. chopped nuts (if desired)

Directions:
Directions:
Mix together flour, 1/3 c. brown sugar, and butter until fine. Press into ungreased pan. Bake at 350 for 15 minutes until light brown. Combine 1 c. brown sugar and remaining ingredients in mixing bowl. Beat at medium speed until thick and foamy. Pour over partially baked crust. Bake at 350 for 20 - 25 minutes until golden brown. You may substitute 1/2 c. chocolate chips for the coconut.
