16 ounces thawed, peeled, deveined fresh or frozen shrimp
cup chopped celery
cup chopped onions
2 tbsp finely chopped salt pork (can use veg. oil instead)
1 16 oz can cut up tomatoes
cup chili sauce
2 tsp sugar
1 clove minced garlic
Hot cooked rice

Cook shrimp in boiling salted water 1 to 3 minutes or till done. Drain and set aside. In saucepan, cook celery, onion and salt pork till celery is tender, about 5 minutes. Add tomatoes, chili sauce, sugar, thyme and garlic. Season to taste with salt and pepper. Cover and simmer 30 minutes. Add shrimp; heat through. Serve with rice.
