Melba toast rounds 1 lb small shrimp, cooked, peeled and deveined ½ cup mayonnaise ¼ cup grated parmesan cheese 2 tsp minced onions Sesame seeds
Spread melba toast on baking sheets. Top each with a shrimp. Combine mayonnaise, cheese and onion. Spoon mixture over shrimp. Sprinkle with sesame seeds. Broil until golden brown and bubbly. This is also delicious as an open-faced sandwich on lightly toasted bread. VARIATION: slice marinated artichoke hearts may be substituted for the shrimp.
