3 potatoes
1 egg
cup shredded Swiss cheese
1 small onion, diced
2 tbsp. butter
1/8 tsp pepper
tsp salt
1 tbsp flour

Directions:
Directions:
Peel and shred potatoes into cold water. Drain, rinse in cold water. Squeeze firmly in paper towels to dry. Beat egg until frothy. Add potatoes, cheese, onion, flour, salt and pepper. Stir. Heat butter in skillet. Drop potato mixture in butter. Turn carefully, brown slowly.
