2 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg
2 eggs, lightly beaten
2 c. dairy or canned eggnog
1/4 c. cooking oil

Directions:
Directions:
In a large bowl combine flour and other dry ingredients. In a second bowl combine remaining ingredients. Stir eggnog mixture into flour mixture until slightly lumpy.
Heat a lightly greased griddle or heavy skillet over medium heat. For each pancake pour 1/4 c. batter into griddle. Cook until golden, turn when tops are bubbly and edges are slightly dry ( 1-2 minutes per side)

To make Pumpkin Pancakes add:
2 c. flour
3 Tbsp. packed brown sugar
1/2 tsp salt
1/4 tsp. ground nutmeg
3 eggs, slightly beaten
3/4 c. canned pumpkin
1/4 c. cooking oil
Cook the same as Eggnog Pancakes.
