Cake:
1 c. softened, unsalted, butter
1 c. sugar
2 eggs
1 and 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. milk
1 tsp. lemon extract

Glaze:
1/3 c. sugar
1/4 c. lemon juice
2 tsp. grated lemon rind

Directions:
Directions:
Preheat oven to 350

Cream butter and sugar. Add eggs one at a time and beat well. Add dry ingredients alternately with milk. Pour into greased 9" x 5" x 13" loaf pan. Bake 45 minutes to an hour or until done.

Meanwhile combine ingredients for the glaze, and heat to a boil. Immediately upon removing loaf cake from the oven, pour the glaze over, then cool.
