Dressing:
juice of 1 lemon
1/4 c. red wine vinegar
1-2 cloves garlic, minced
1 tsp. Dijon mustard or 1/2 tsp dry mustard
salt and freshly ground pepper
1/2 tsp. dried tarragon
1 green onion, minced [both green and white parts]
3/4 c. olive oil*

Salad:
1 small Bermuda onion
1 large head cauliflower or broccoli, cut into florets
2 TBSP chopped fresh herbs, [e.g. basil, thyme, dill, rosemary, marjoram]
1/2 c. chopped fresh parsley
2-4 TBSP freshly grated Parmesan cheese-optional

Dressing:
Mix all ingredients well, adding olive oil last.

Salad:
Slice onion and place in small saucepan. Cover and simmer 4-5 minutes. Drain and refresh under cold water.
Steam cauliflower and/or broccoli 5*-10 minutes, just until crisp-tender.
Drain and toss immediately w/herbs and onion.
Toss w/dressing. Top w/optional Parmesan cheese.
*substitute 2 TBSP safflower oil plus 1/2 c. bouillon for olive oil. Omit salt. Use 1/2 tsp. dry mustard.
