1 and 1/3 c. bulgar wheat
2 cucumbers
3-4 green onions
chopped coriander [cilantro] leaves
2 tsp salt
1/3 c. water
juice of one lemon
1/4 to 1/3 c. salad or olive oil
2-3 tomatoes, diced

Directions:
Directions:
Rinse bulgar wheat, drain well [use fine strainer, not colander.]
Peel and shred cucumber. Add to wheat along w/remaining ingredients except tomato. Stir.
Refrigerate 6-8 hours or overnight.
Add tomato just before serving.
