- 6 cups - zucchini - peeled, sliced, quartered
- 1 onion - chopped
- 1 can - cream of mushroom, or chicken, or celery
- 1 cup sour cream
- 1 cup shredded carrots
- 1 - 8oz box - stovetop stuffing - herb
- 1/2 cup - melted butter

Directions:
Directions:
Preheat oven 350 F

- parboil zucchini, onion in salted water for 5 minutes
- drain
- combine soup, sour cream, carrots in a large boil
- stir in zucchini, onion
- combine stuffing mix, seasoning, and butter
- sprinkle 1/2 of stuffing on the bottom f a casserole dish
- spread zucchini mix on top of stuffing
- sprinkle rest of stuffing on top
- bake for 30 minutes
