8 slices day old bread
2 cups diced cooked boneless chicken
1/2 cup chopped onions
1/2 cup chopped green bell peppers
1/2 cup chopped celery
1/2 cup mayonnaise
3/4 teaspoon salt
2 slightly beaten eggs
1 1/2 cups milk
1 can cream of mushroom soup
1/2 cup shredded sharp cheddar cheese

Directions:
Directions:
Butter 2 slices bread; cut in 1/2 inch cubes and set aside. Cut remaining bread into 1 in cubes. Place 1/2 of unbuttered cubes in bottom of 8 x 8 x 2 inch baking dish. Combine chicken, vegetables, mayonnaise, salt, dash pepper. Spoon over bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture. Combine eggs and milk; pour over all. Cover and chill 1 hour or overnight. Spoon soup over top. Sprinkle with buttered cubes. Bake at 325 for 50 minutes or till set. Sprinkle cheese over top last few minutes of baking.

Editor note: This does not freeze. It is a disaster as mayo separates and casserole swims in oil. (believe me, it happens)
