4 pounds trimmed, lean Sirloin steak
6 slices bacon
2 cloves crushed garlic
2 pounds sliced mushrooms
2 bay leaves
1 teaspoon salt
1/8 teaspoon pepper
2 teaspoons chopped parsley
1 teaspoon thyme
1/2 cup butter
1/2 cup flour
2 cans Consomme

Directions:

Cut bacon in small pieces and fry in Dutch oven. Remove bacon and saute sirloin strips (1/2 x 4) in drippings. Add garlic and mushrooms. Season with bay leaf, parsley, salt, thyme and pepper. Add bacon. Remove from heat. In another pan make a roux with butter and flour. Cook stirring constantly until flour turns light tan. Add consomme (or part wine if desired). Stir and cook until slightly thickened. Add to beef and mushrooms, cover and simmer until beef is done (1 1/2 hours.) Serve over rice or noodles.
