1 1/4 C All Purpose Flour
1 C Whole Wheat Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 C. Pureed Prunes or Plums
3/4 C. Light Brown Sugar
1 tsp. Vanilla
3 T. egg replacer + 4 T. Water
1 1/2 C. Flax Seed meal, ground
1 1/2 C Semi-sweet or dark chocolate chips
1 C chopped walnuts

Directions:

Preheat oven to 375º

Stir together flour, flaxseed, salt and baking soda

Beat Prunes, sugars, and vanilla until well mixed and sugar is dissolved.

Mix the egg replacer and water together until smooth, add to the sugar mixture.

Once mixed, gradually mix the dry ingredients into liquids. Beat well.

Add Chocolate Chips and nuts if desired.

Spray a muffin pan tin, square pan or baking sheet.

Fill pans or drop batter onto sheet.

Bake for about 25 minutes, check for doneness with a toothpick.

These are a dense cookie, but so tasty. They're perfect for those with peanut allergies (remove the walnuts), or egg allergies. I personally can't get past the dough!
