MARINADE:
cup balsamic vinegar
cup oil
cup honey

Directions:
Directions:
Marinate chicken for 1 hour in refrigerator. Preheat oven to 375. Transfer chicken and marinade to pan. Bake for 1 hour, uncovered. I use a whole chicken. The skin turns a nice mahogany brown. (You could use chicken pieces as well.)


June is my good friend, and a good librarian, at the Charlestown Library. This chicken, though simple to prepare, is delicious.
