3 eggs, beaten
1 cup sugar
2 tsp shortening
3 3/4 cup sifted flour
2 tsp baking powder
1 tsp baking soda
1/2 salt
1/4 cinnamon
1 tsp grated lemon rind
2/3 cup buttermilk

Directions:
Directions:
In electric mixer at high speed, beat eggs,sugar and shortening until fluffy.
Sift together flour, baking powder, salt, soda and spices.
Stir in lemon rind at low speed. gradually beat buttermilk into egg mixture in mixing bowl.
Add flour mixture.
Gradually beat untill blended.
Cover bowl and chill for 1 hour.
Roll dough out 1/2 inch thick on a well floured board.
Cut with doughnut cutter.
