4 large Green Peppers 1 medium onion 2 c cooked rice 8 oz ground cooked ham or sausage 1 c shredded cheddar cheese (divided)
Par boil peppers 5 minutes, drain. Thoroughly mix rice, onion, ham and ½ c cheese. Generously stuff peppers with rice mixture. Top with remaining ½ c cheese. Place upright in shallow baking dish. Bake in preheated oven at 350 degrees for 40 minutes or until stuffing is hot and topping browned.
