Salad:
2 c. uncooked bow tie pasta
2 c. cubed cooked skinless chicken breast
1 c. halved grape tomatoes
2 T. chopped pitted black olives
Walnut pesto:
1 c. basil leaves
1/2 c. parsley leaves (optional)
3 T. coarsely chopped walnuts, toasted
1 1/2 T. olive oil
1 T. white wine vinegar
1/2 t. salt
1 garlic clove

Directions:
Directions:
To prepare salad, cook pasta to al dente. Drain. Combine pasta, chicken, tomatoes, and olives in a large bowl. To prepare pesto, combine basil and next 6 ingredients in a food processor and pulse 6 times or until finely minced. Add pesto to pasta and toss.

This is one of my favorite recipes. I like to put more white wine vinegar on it the next day. It is also a good way to use rotisserie chicken.
