1 and 1/2 lbs. cream cheese
3 eggs
1 c. sugar
lemon juice or extract
1 graham cracker crust

Directions:
Directions:
Pre-Heat oven to 350

Beat 1 8oz. pkg cream cheese and 1 egg until almost smooth; add another package and egg, and then the third until all mixed together.
Toss in sugar and beat well until smooth.
Add flavoring a little at a time to taste.
Pour into crust and bake 20 minutes at 350 or until slightly browned around the edges and center is firm.
CHILL WELL BEFORE SERVING.

This is an old-fashioned "heavy" cheesecake recipe. It is delicious. I would suggest also adding some freshly grated lemon peel. Am also thinking about switching it to lime juice and lime peel.
