Ingredients:  
Ingredients:  
1 med onion, chopped and sautéed in 3 T olive oil
2 lbs cooked chicken, shredded (or more)
4 C chicken broth
8 oz diced green chilies or 7 oz salsa verde (tomatillo, onion, etc)
10 can RoTel (tomatoes and chili)
1 tsp granulated garlic
¼ tsp pepper
1 tsp salt
1 ½ tsp cumin
1 ½ tsp oregano
3 - 15 oz cans white beans (or 1 lb dry white beans, soaked and cooked)

Garnish with:
shredded Montery Jack cheese
Green onion
Sour cream

Simmer all ingredients together till hot throughout.
