1 (2 1/2 to 3 pound) rotisserie chicken
1 3/4 C cooked green beans, cut into 1 in pieces
1 3/4 C cooked corn kernels
1 red bell pepper, chopped (or, red tomato, seeded)
1/4 C sweet onion, chopped
1/2 C chopped fresh basil (or 2 Tbsp dried basil)
1/4 C pine nuts or almonds, toasted
2 cloves garlic, crushed
1/3 C extra virgin olive oil
1/4 C red or white wine vinegar
1 tsp salt
12 tsp pepper

Directions:
Remove meat from chicken bone and chop coarsely. You should have about 4 cups meat. Toss checken, beans, corn, bell pepper/tomato, basil and nuts in a large bowl. Wisk garlic, oil, vinegar, salt and pepper together and pour over salad ingredients. Toss and serve. Serves 8

Any cooked chicken can be substituted for the rotisserie chicken.
