Rhubarb Cream Cake
1 pkg white (or yellow) cake mix
3 C rhubarb, finely diced
1 C sugar
2 C whipping cream (can use 1/2 and 1/2)

Directions:
Directions:
Prepare cake mix as package directs. Pour into greased and bottom-floured 9 x 13 cake pan. Arrange rhubarb evenly on top of batter. Sprinkle on sugar. Pour 2 C whipping cream evenly over sugar/rhubarb. Bake at 350 degreesfor 40-45min. Serve warm or room temperature.

A delicious custard forms at the bottom of the pan as cake bakes. Leftovers should be refrigerated.
