2 - 8 oz. cartons, small curd 1% fat cottage cheese
1 cube butter or margarine, melted
1/2 pound sharp cheddar cheese, grated
2 boxes chopped spinach, frozen
6 T. flour
1 t. garlic salt
6 eggs, beaten

Directions:
Directions:
1- Preheat oven to 350 F.
2- Cook spinach and squeeze out all the liquid. (Microwave is faster)
3- Mix all ingredients together and put in a greased 9" X 13" baking dish.
4- A souffle needs to cook in a water bath. Place the souffle pan into a larger pan which will hold 1 1/2 inches of warm water around sides of souffle pan.
5- Bake at 350 F oven for 60 minutes. Cover with foil for the first 1/2 hour of cooking time. Serve hot.
