2 pounds of navy beans
1 ham bone or 3 slices of ham
1 1/2 t. salt (optional)
3 T. brown sugar
1/2 cup light molasses
1 t. dry mustard
1 onion, chopped
1 bay leaf
2/3 cup tomato sauce or ketchup

Directions:
Directions:
1- Wash beans and soak overnight in water that covers the beans. Drain beans in the morning.
2- In a heavy pan, add the ham bone or cut up slices of ham. The beans and onion need to simmer for 2 hours or until beans become tender. Place beans and liquid in a bean pot or large casserole dish.
3- Mix together 1 cup boiling water with salt, brown sugar, molasses and dry mustard. Pour over beans. Add ketchup and mix ingredients. Place bay leaf on top.
4- Cover pot and bake in a slow oven 250 to 275 F for 6 to 8 hours. Add more water when needed to keep beans moist. Remove the cover the last half hour of baking.
TIP: AFTER SOAKING BEANS OVERNIGHT, DRAIN THEN FREEZE THEM BEFORE COOKING. THIS REDUCES RISK OF DEVELOPING INTESTINAL GAS.
