1/2 cup butter, soften (margarine)
1/2 cup granulated sugar
1 T. lemon juice
2 t. grated lemon peel
1 1/2 cups all-purpose flour
1/4 t. salt
Additional sugar for sprinkling

Directions:
Directions:
In the electric mixer bowl, beat butter, sugar until fluffy. Add egg, beat until smooth. Beat in lemon juice and lemon peel. On low speed, add flour and salt together then blend well. Divide dough in half on a large square of wax paper. Knead dough lightly to blend thoroughly. Shape each half into a roll about 1 to 1 1/2 inches in the diameter. Wrap rolls in wax paper, twisting ends of paper around dough ends for a tight closure. Refrigerate at least 4 hours or overnight. Dough can be kept one week in a refrigerator or 3 months in freezer. With a sharp knife, cut rolls into 1/8 inch thick slices. Place slices on ungreased baking sheets. If desired, sprinkle sugar on slices before baking. Bake in a preheated oven 400 F for 8 to 10 minutes or just until edges begin to brown. Remove from pans and let cool on racks.
