2 c sugar
1 c oil
3 eggs
2 c flour
1 tsp cinnamon
1 tsp salt
2 tsp baking soda
1/4 tsp baking powder
1 tsp vanilla
2 c zucchini shredded
1 sm carrot shredded
3/4 rolled oats
1 c chopped walnuts

Beat together sugar, oil and eggs. Beat in flour, cinnamon, salt, baking soda, baking powder, and vanilla. Fold in zucchini, carrots, oats and walnuts. Pour into 15x10x1 pan. Bake at 350 for 15-20 minutes or until done. Cool. Top with cream cheese frosting.
