8 OZ. OF DATES--PITTED
1 CUP RAISINS
1 1/2 CUP WATER, DIVIDED
1/3 CUP CORN OIL
1 TEASPOON OF CINNAMON
1/8 TEASPOON OF NUTMEG
1 TEASPOON OF BAKING SODA
2 EGGS OR 2 EGG WHITES CAN BE USED
2 CUPS WHOLE WHEAT FLOUR
1 TEASPOON BAKING POWDER

1- COMBINE DATES, 1 1/4 CUPS OF WATER, OIL AND SPICES IN HEAVY SAUCE PAN. COOK OVER MEDIUM HEAT FOR 5 MINUTES UNTIL MUSHY. COOL TO ROOM TEMPERATURE.
2- DISSOLVE BAKING SODA IN 1/4 WATER. ADD THE EGGS OR EGG WHITES AND MIX WELL.
3- COMBINE FLOUR AND BAKING POWDER. MIX WELL.
4- COMBINE ALL INGREDIENTS TOGETHER MAKING A DOUGH.
5- DROP DOUGH BY ROUNDED TEASPOONFULS ONTO SLIGHTLY GREASED COOKIE SHEET.
5. BAKE IN PREHEATED OVEN 350 F. FOR 12 MINUTES OR UNTIL COOKIES ARE LIGHTLY BROWN.
